- 1 diced onion
- 2 diced carrots
- 2 diced celery stalks
- 3 cloves minced garlic
- 2 tablespoons tomato paste
- 1½ cups brown or green lentils
- 6 cups vegetable or chicken broth
- 1 bay leaf
- 1 can (14.5 oz) diced tomatoes
- 2 cups fresh spinach or kale
- Juice of 1 lemon
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, carrots, and celery; cook for 5-7 minutes until softened.
- Stir in minced garlic, tomato paste, cumin, coriander, smoked paprika, and oregano; cook for an additional 1-2 minutes.
- Add lentils, broth, bay leaf, and diced tomatoes; bring to a boil.
- Reduce heat and let simmer for 25-30 minutes, until lentils are tender.
- Stir in fresh greens and lemon juice; adjust seasoning with salt and pepper.
- Ladle soup into bowls and garnish with fresh parsley before serving.
Notes
Serve with crusty bread or a simple side salad. This soup can be made ahead and tastes even better the next day.
