Ingredients

  • 1 diced onion
  • 2 diced carrots
  • 2 diced celery stalks
  • 3 cloves minced garlic
  • 2 tablespoons tomato paste
  • 1½ cups brown or green lentils
  • 6 cups vegetable or chicken broth
  • 1 bay leaf
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh spinach or kale
  • Juice of 1 lemon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery; cook for 5-7 minutes until softened.
  3. Stir in minced garlic, tomato paste, cumin, coriander, smoked paprika, and oregano; cook for an additional 1-2 minutes.
  4. Add lentils, broth, bay leaf, and diced tomatoes; bring to a boil.
  5. Reduce heat and let simmer for 25-30 minutes, until lentils are tender.
  6. Stir in fresh greens and lemon juice; adjust seasoning with salt and pepper.
  7. Ladle soup into bowls and garnish with fresh parsley before serving.

Notes

Serve with crusty bread or a simple side salad. This soup can be made ahead and tastes even better the next day.
