  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper (optional)
  • Wood chips for smoking (hickory or applewood)

Instructions

  1. Preheat your smoker to 250°F (120°C).
  2. Pat the chicken thighs dry with paper towels.
  3. Rub the thighs with olive oil.
  4. In a bowl, mix smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
  5. Season the chicken evenly with the spice mix.
  6. Place the thighs skin side up in the smoker.
  7. Add wood chips to the smoker box or directly onto the coals.
  8. Smoke the chicken for 2.5 to 3 hours, or until the internal temperature reaches 175°F (79°C).
  9. Optional: For crispier skin, sear the thighs on a hot grill or under a broiler for 2-3 minutes.
  10. Let rest 5 minutes before serving.
