Ingredients
1 box red velvet cake mix
2 eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup white chocolate chips (optional)
1/2 cup powdered sugar (for rolling)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix together the red velvet cake mix, eggs, vegetable oil, and vanilla extract until well combined.
Fold in the white chocolate chips (if using).
Scoop out tablespoon-sized portions of dough and roll them into balls.
Roll each dough ball in powdered sugar and place them on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are set and the tops have a crinkled appearance.
