These Red Velvet Cake Cookies are soft, chewy, and packed with the rich cocoa flavor of classic red velvet cake. Made with simple ingredients, they’re perfect for Valentine’s Day, Christmas, or any time you crave a sweet treat!


Ingredients

  • 1 box red velvet cake mix

  • 2 eggs

  • 1/3 cup vegetable oil

  • 1 teaspoon vanilla extract

  • 1/2 cup white chocolate chips (optional)

  • 1/2 cup powdered sugar (for rolling)


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • In a large bowl, mix together the red velvet cake mix, eggs, vegetable oil, and vanilla extract until well combined.

  • Fold in the white chocolate chips (if using).

  • Scoop out tablespoon-sized portions of dough and roll them into balls.

  • Roll each dough ball in powdered sugar and place them on the prepared baking sheet, spacing them about 2 inches apart.

  • Bake for 10-12 minutes or until the edges are set and the tops have a crinkled appearance.

  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
