Libby’s Pumpkin Roll is a delightful dessert that combines the rich flavors of pumpkin and spices, rolled around a luscious cream cheese filling.

- 1 1/4 cup powdered sugar, divided
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup LIBBY’S® 100% Pure Pumpkin
- 1 cup walnuts, chopped (optional)
- 1 (8-ounce) package cream cheese, at room temperature
- 6 tablespoons butter or margarine, softened
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F. Grease a 15 x 10-inch jelly roll pan and line it with wax paper.
- Spread a kitchen towel on a clean surface and sprinkle it with 1/4 cup of powdered sugar.
- In a small bowl, mix the flour, baking powder, baking soda, cinnamon, cloves, and salt.
- In another bowl, beat the eggs and granulated sugar until thick and light in color.
- Mix in the LIBBY’S® pumpkin until combined.
- Gradually stir the flour mixture into the pumpkin mixture, being careful not to over-mix.
- Spread the batter evenly in the prepared pan, topping with walnuts if desired.
- Bake for 13-15 minutes or until the top springs back to the touch.
- Remove from the oven, loosen edges, and flip the cake onto the prepared towel. Carefully peel off the parchment paper.
- Roll the cake up with the towel, starting from the narrow end, and let it cool completely on a wire rack.
- For the filling, beat together cream cheese, 1 cup of powdered sugar, butter, and vanilla extract until smooth.
- Once cooled, unroll the cake and spread the cream cheese mixture over it. Re-roll tightly and wrap in plastic wrap; refrigerate for at least one hour.
- Before serving, dust with powdered sugar and slice to enjoy.
