Ingredients

  • 1 1/4 cup powdered sugar, divided
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup LIBBY’S® 100% Pure Pumpkin
  • 1 cup walnuts, chopped (optional)
  • 1 (8-ounce) package cream cheese, at room temperature
  • 6 tablespoons butter or margarine, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F. Grease a 15 x 10-inch jelly roll pan and line it with wax paper.
  2. Spread a kitchen towel on a clean surface and sprinkle it with 1/4 cup of powdered sugar.
  3. In a small bowl, mix the flour, baking powder, baking soda, cinnamon, cloves, and salt.
  4. In another bowl, beat the eggs and granulated sugar until thick and light in color.
  5. Mix in the LIBBY’S® pumpkin until combined.
  6. Gradually stir the flour mixture into the pumpkin mixture, being careful not to over-mix.
  7. Spread the batter evenly in the prepared pan, topping with walnuts if desired.
  8. Bake for 13-15 minutes or until the top springs back to the touch.
  9. Remove from the oven, loosen edges, and flip the cake onto the prepared towel. Carefully peel off the parchment paper.
  10. Roll the cake up with the towel, starting from the narrow end, and let it cool completely on a wire rack.
  11. For the filling, beat together cream cheese, 1 cup of powdered sugar, butter, and vanilla extract until smooth.
  12. Once cooled, unroll the cake and spread the cream cheese mixture over it. Re-roll tightly and wrap in plastic wrap; refrigerate for at least one hour.
  13. Before serving, dust with powdered sugar and slice to enjoy.
