  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter or 3 tablespoons olive oil and 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk or half-and-half
  • 1/2 cup heavy cream (optional)
  • 2 cups freshly shredded sharp cheddar cheese
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped chives
  • 1 teaspoon fresh thyme leaves
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Pinch of cayenne pepper or smoked paprika (optional)
  • Optional garnishes: crumbled bacon, extra cheese, sour cream, fresh herbs, crispy croutons

Instructions

  1. Peel and cube the Yukon Gold potatoes into uniform ½-inch pieces. Rinse under cold water.
  2. In a large pot, heat your chosen fat over medium heat. Once melted, add the chopped onion and sauté for 5-7 minutes until translucent.
  3. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Sprinkle all-purpose flour over the mixture, and stir continuously for about 1-2 minutes to create a roux.
  5. Gradually whisk in the chicken or vegetable broth, scraping the bottom of the pot.
  6. Bring the mixture to a gentle simmer before adding cubed potatoes. Cover and cook for 15-20 minutes until potatoes are tender.
  7. Ladle half of the soup into a blender and blend until smooth. Return it to the pot.
  8. Reduce heat to low and stir in the milk (or half-and-half) and heavy cream if using. Heat through for about 5 minutes, but do not boil.
  9. Remove from heat and add the sharp cheddar cheese a handful at a time, stirring until melted. Season with salt, pepper, and cayenne or smoked paprika.
  10. Ladle into bowls and garnish with optional toppings as desired.

Notes

Peeling the potatoes creates a smoother texture, but you can leave the skins on for a rustic touch. Feel free to experiment with different cheeses and herbs to customize your soup.
