  • 32 ounces frozen cubed hash browns, thawed
  • ¼ cup unsalted butter (divided)
  • 2 cups sharp cheddar cheese
  • 1 ½ cups sour cream
  • 1 small yellow onion, diced
  • 2 teaspoons minced garlic
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup chicken broth (or vegetable broth for vegetarian option)
  • ½ cup whole milk, at room temperature
  • 2 large yellow onions, thinly sliced

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick spray.
  2. In a large bowl, combine thawed hash browns, half of the melted butter, sharp cheddar, sour cream, diced onion, garlic, flour, salt, pepper, cayenne, and mustard. Stir until well mixed.
  3. In a skillet, melt the remaining butter over medium heat and add the sliced onions. Cook until golden brown, about 20-25 minutes.
  4. Layer half of the potato mixture in the baking dish, spread it evenly, then add half of the caramelized onions on top.
  5. Add the second half of the potato mixture followed by the rest of the caramelized onions on top.
  6. Bake in the preheated oven for 60-70 minutes until bubbly and golden brown. Let cool for a few minutes before serving.

Notes

For make-ahead preparation, assemble the dish a day prior and store in the fridge, adding toppings right before baking.
