Description

A soft, moist, and flavorful easy homemade kefir sheet cake with a subtle tang and a tender crumb—made in one bowl with simple ingredients.


Ingredients

2 cups all-purpose flour

1 cup plain kefir

1 cup granulated sugar

2 large eggs

½ cup neutral oil (or melted butter)

1 teaspoon baking soda

1½ teaspoons vanilla extract

¼ teaspoon salt


Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch sheet pan.

2. In a large bowl, whisk together flour, baking soda, and salt.

3. In a separate bowl, beat the eggs and sugar until light and frothy.

4. Add kefir, oil, and vanilla to the egg mixture and mix until smooth.

5. Combine wet and dry ingredients, stirring until just combined.

6. Pour batter into the prepared pan and smooth the top.

7. Bake for 30–35 minutes, or until a toothpick inserted comes out clean.

8. Let the cake cool completely in the pan before slicing and serving.

Notes

This cake can be topped with powdered sugar, lemon glaze, or served with berries and whipped cream.

To freeze, wrap slices in parchment and store in a sealed bag for up to 2 months.

For extra flavor, add lemon zest or chocolate chips to the batter.
