- 8 oz cremini or white mushrooms, sliced
- 3 cloves garlic, minced
- ½ cup chicken broth

- ¾ cup heavy cream
- 1 teaspoon Dijon mustard
- 1 tablespoon cornstarch + 2 tablespoons cold water (for slurry)
- Salt & pepper, to taste
- Fresh thyme or parsley, for garnish
Instructions
- Heat a large skillet over medium heat and add butter and olive oil.
- Add sliced mushrooms and brown them without stirring too frequently.
- Remove browned mushrooms and set aside.
- Season chicken cutlets with salt and pepper, then sear them until golden brown, about 5-6 minutes per side.
- Remove chicken and let rest.
- Add more butter (if needed) and sauté minced garlic until fragrant.
- Deglaze the pan with lemon juice, scraping up brown bits from the bottom.
- Pour in chicken broth, simmer, and stir in Dijon mustard and sautéed mushrooms.
- Add heavy cream and cornstarch slurry, stirring until sauce thickens to desired consistency.
- Return chicken to skillet, coating with sauce, and garnish with thyme or parsley before serving.
Notes
This dish pairs well with garlic mashed potatoes or steamed vegetables. For added flavor, consider white wine in the deglazing process or grated Parmesan for richness.
