- 1 lb fresh lump crab meat
- 1 lb shrimp, peeled and deveined
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, finely diced
- 2 celery stalks, finely diced
- 2 carrots, finely diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp all-purpose flour
- 4 cups seafood or chicken broth
- 1 tsp Old Bay seasoning
- 1 tsp sweet paprika
- 1 bay leaf
- Salt, to taste
- Pepper, to taste
- 1 cup heavy cream
- Fresh parsley or chives, for garnish
- Lemon wedges, for serving
Instructions
- Prepare the seafood by peeling and deveining the shrimp. Set crab meat aside.
- In a large pot, melt butter and olive oil over medium heat. Add diced onion, celery, and carrots; cook for 5-7 minutes until softened.
- Add minced garlic and cook for 1 minute.
- Stir in tomato paste and cook for 1-2 minutes. Sprinkle flour over the mixture and stir to combine.
- Slowly pour in the seafood or chicken broth while whisking to avoid lumps. Add Old Bay, paprika, bay leaf, salt, and pepper. Simmer for 10 minutes.
- If desired, blend the soup partially for a smoother texture, then return to pot.
- Lower the heat, stir in heavy cream, and add crab meat and shrimp. Simmer for another 5-7 minutes until shrimp are opaque, adjusting seasonings as necessary.
- Remove the bay leaf, garnish with parsley or chives, and serve with lemon wedges.
Notes
This soup can be made in advance and stored in an airtight container in the fridge. Reheat gently before serving.
