- 2 medium ripe bananas (mashed, about 3/4 cup)
- 1 cup pumpkin puree
- 2 large eggs
- 1 cup light brown sugar
- 1/3 cup vegetable oil
- 1 tablespoon vanilla extract
- 1–1/2 cups all-purpose flour (spooned and leveled)
- 1 teaspoon baking soda
- 1 tablespoon pumpkin pie spice
- 1/4 teaspoon salt
- 1 cup semisweet chocolate chips
Instructions
- Preheat your oven to 350°F and line a 9×5 loaf pan with parchment paper.
- In a large bowl, whisk together the mashed banana, pumpkin puree, eggs, sugar, vegetable oil, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
- Carefully fold the flour mixture into the wet ingredients until just incorporated, avoiding over-mixing.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top. Optionally, sprinkle extra chocolate chips on top.
- Bake for about 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool completely in the pan before lifting it out to slice.
Notes
Serve plain, with butter, or cream cheese. Can be packaged into mini loaves as gifts. Freezes well for up to three months.
