  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan lined with parchment paper.
  2. In a large mixing bowl, whisk together the flour, coconut sugar, apple pie spice, ground cinnamon, baking soda, and salt.
  3. Make a well in the center of the dry ingredients and pour in the almond milk, apple cider, olive oil, and vanilla extract. Stir until just combined.
  4. Pour the batter into the prepared baking pan and bake for 24-26 minutes, or until a toothpick inserted comes out clean.
  5. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  6. To make the buttercream frosting, beat the vegan butter until smooth. Gradually mix in the powdered sugar, then add the apple pie spice and vanilla extract until well combined.
