- 1/2 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan lined with parchment paper.
- In a large mixing bowl, whisk together the flour, coconut sugar, apple pie spice, ground cinnamon, baking soda, and salt.
- Make a well in the center of the dry ingredients and pour in the almond milk, apple cider, olive oil, and vanilla extract. Stir until just combined.
- Pour the batter into the prepared baking pan and bake for 24-26 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- To make the buttercream frosting, beat the vegan butter until smooth. Gradually mix in the powdered sugar, then add the apple pie spice and vanilla extract until well combined.
- Once the cake is completely cool, frost the top generously with the buttercream frosting.
- Slice and serve, enjoying the rich flavors and textures.
